  • 800 g potatoes (peeled, boiled, and chilled)
  • 2 tbsp butter
  • 1 small onion (finely chopped)
  • Salt and pepper to taste
  • Fresh herbs (optional, such as parsley or thyme)
  • Grate the potatoes: Grate the boiled potatoes using a coarse grater, ensuring they are firm but soft enough to easily grate.
  • Sauté the onions: In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and golden.
  • Cook the Rösti: Add the grated potatoes to the skillet with the onions. Press the mixture down evenly with a spatula. Cook over low to medium heat for 10-15 minutes, allowing the bottom to crisp up.
  • Flip and cook: Once the bottom is golden brown and crispy, carefully flip the Rösti over and cook the other side for another 10-15 minutes until crispy.
  • Serve: Slice and serve the Rösti with fresh herbs, if desired. It can be eaten as a side dish or a main with eggs or meats.

Rösti is a traditional Swiss dish originally from the German-speaking part of Switzerland. It's often enjoyed as a breakfast dish but is equally popular as a side for lunch or dinner.
