  • 500 g cornmeal
  • 1 liter water
  • 1 tsp salt
  • 100 g butter
  • 150 g feta cheese (crumbled)
  • Fresh dill (chopped, for garnish)
  • Prepare the cornmeal: In a large pot, bring the water to a boil and add the salt. Slowly whisk in the cornmeal to avoid lumps.
  • Cook the mamaliga: Reduce the heat to medium-low and cook the mixture, stirring frequently, for 20-25 minutes until it thickens and pulls away from the sides of the pot.
  • Finish the dish: Stir in the butter and mix until melted and smooth.
  • Serve: Transfer the mamaliga to a serving dish, top with crumbled feta cheese and fresh dill, and serve warm.

Mamaliga is a traditional dish in Moldova and many parts of Eastern Europe. It's made from cornmeal and often served as a side dish or main course, usually accompanied by cheese, sour cream, or meat. In Moldova, it's sometimes even eaten for breakfast!
