  • 500 g phyllo dough
  • 400 g Bulgarian feta cheese (crumbled)
  • 4 large eggs
  • 1 cup plain yogurt
  • 1/2 cup sparkling water
  • 1/4 cup butter (melted)
  • 1/4 cup vegetable oil
  • Preheat your oven to 180°C (350°F). Grease a baking dish with butter or oil.
  • In a bowl, mix the crumbled feta cheese, eggs, and yogurt until well combined.
  • Lay one sheet of phyllo dough in the baking dish, letting the edges hang over. Brush with a mixture of melted butter and oil.
  • Add another layer of phyllo dough, brushing with butter and oil. Spread a few spoonfuls of the cheese mixture evenly over the dough.
  • Repeat the layering process, alternating phyllo and cheese filling, until all ingredients are used, finishing with phyllo on top.
  • Pour the sparkling water evenly over the top to create a fluffy texture.
  • Bake for 30-40 minutes, or until golden brown. Let cool slightly before slicing.
  • Serve warm or at room temperature.
