  • 1 kg lamb (shoulder or leg)
  • 500 g plain yogurt
  • 4 eggs
  • 2 tbsp butter
  • 2 tbsp rice
  • 1 tbsp flour
  • Salt and pepper to taste
  • Fresh oregano or parsley for garnish (optional)
  • Preheat your oven to 180°C (350°F).
  • Season the lamb with salt and pepper. In a large pan, sear the lamb on all sides over medium-high heat until browned. Transfer it to a baking dish.
  • In the same pan, melt 1 tbsp of butter and sauté the rice for 1-2 minutes. Spread the rice evenly over the lamb in the baking dish.
  • In a bowl, whisk the yogurt, eggs, flour, and a pinch of salt until smooth. Slowly pour the mixture over the lamb and rice, ensuring it is evenly distributed.
  • Melt the remaining butter and drizzle it over the dish.
  • Bake in the oven for 45-60 minutes or until the top is golden and the lamb is tender.
  • Let it rest for a few minutes before serving. Garnish with fresh herbs, if desired.

Tave Kosi is often called the "comfort food" of Albania and is a symbol of hospitality. It dates back to the Ottoman Empire and is beloved for its tangy yogurt-based sauce.
